Step 8:
Wait 5-7 seconds, and then using the cover of the "Service Cup" to hold back the leaves, pour out this first round of water into the large bowl. This dispels any bitterness and rinses and "sets" the leaves.

Step 9:
Now refill the "Service Cup" with fresh hot water, filling it to the brim.
|
|
Step 10:
Empty the "Drinking Cups" and each of the "Sniffing Cups" that were filled with hot water to clean and warm them.

Step 11:
Use the cover of the "Service Cup" to slightly stir the tea inside the cup to remove any surface bubbles.
|
|
Step 12:
After 10-12 seconds of brewing, (only a very short time is needed) use the cover as shown to hold back the leaves and pour the fresh tea from the "Service Cup" into the small teapot.

Step 13:
Pour the green tea from the small teapot into the 3 small "Sniffing Cups".
|
|
Step 14:
Pour the tea from the "Sniffing Cups" into the "Drinking Cups". Then as the residual tea is evaporating from the empty "Sniffing Cups", enjoy the perfume like aroma!

Step 15:
Appreciate the light color of the brewed Xianju Green Tea. Sip the tea slowly, and enjoy! You may repeat this process using the same leaves again, brewing the tea 5 seconds longer for each consecutive round of water.
